Cucumber Pineapple Salad with Mint & Herbs
Ingredients:
- 1 cup cucumber, thinly sliced
- 1 cup fresh pineapple chunks
- 2 tbsp chopped fresh mint
- 2 tbsp chopped parsley or cilantro
- 1 tbsp fresh lime juice
- 1 tsp olive oil
- ¼ tsp red pepper flakes (optional, for a spicy kick)
- Salt & pepper to taste
️ Instructions:
Prepare the produce:
Slice cucumbers and chop pineapple into bite-sized chunks. Roughly chop the mint and parsley.
Make the dressing:
In a small bowl, whisk together lime juice, olive oil, salt, pepper, and red pepper flakes.
Combine salad:
In a mixing bowl, toss cucumber, pineapple, and herbs with the dressing until well coated.
Garnish & serve:
Top with a few whole mint leaves for freshness and serve chilled!
