Crustless Tomato Basil Mozzarella Quiche
Ingredients:
6 large eggs
1 cup milk (or half & half for creamier texture)
1 cup shredded mozzarella cheese
½ cup grated Parmesan cheese
1 cup cherry tomatoes, halved
½ cup fresh basil leaves, chopped
1 small onion, finely diced (optional)
2 cloves garlic, minced
1 tbsp olive oil
Salt & black pepper, to taste
Directions:
Preheat oven to 375°F (190°C). Grease a 9-inch pie dish or baking dish.
In a skillet, heat olive oil over medium heat. Sauté onion (if using) and garlic until softened.
In a mixing bowl, whisk together eggs, milk, salt, and pepper.
Stir in mozzarella, Parmesan, basil, and sautéed onion/garlic.
Pour mixture into the greased dish. Evenly scatter halved cherry tomatoes on top.
Bake for 30–35 minutes until the quiche is set in the center and slightly golden.
Let cool for 5 minutes before slicing. Serve warm or at room temperature.
