Ingredients:
4 large potatoes, peeled and grated
1 small onion, finely grated
1 egg
2 tablespoons all-purpose flour
1 teaspoon baking powder
Salt and pepper to taste
2 tablespoons vegetable oil (for frying)
Sour cream or applesauce (for serving)
Directions:
Grate the potatoes and onion using a box grater or food processor. Place them in a clean kitchen towel or cheesecloth and squeeze out excess moisture.
In a large bowl, combine the grated potatoes, grated onion, egg, flour, baking powder, salt, and pepper. Stir until the mixture holds together and forms a thick batter.
Heat vegetable oil in a large skillet over medium-high heat.
Drop spoonfuls of the potato mixture into the hot oil, pressing down gently with the back of the spoon to flatten them. Fry the pancakes for about 3-4 minutes per side, or until golden brown and crispy.
Remove from the skillet and drain on paper towels.
Serve the potato pancakes hot with sour cream or applesauce on the side.
