Creamy Broccoli and Cheddar Soup
Ingredients:
• 1/2 cup fresh broccoli florets
• 1 small onion, finely chopped
• 2 garlic cloves, minced
• 2 tablespoons unsalted butter
• 3/4 cup chicken or vegetable broth
• 2 cups whole milk
• 1 cup heavy cream
• 2 cups grated cheddar cheese
• 1/2 teaspoon salt
• 1/2 teaspoon black pepper
• 1/4 teaspoon paprika
• 2 tablespoons all-purpose flour
Directions:
1. In a large saucepan, melt the butter over medium heat. Add the onion and garlic and cook until softened and fragrant. Stir in the flour and cook for 1 minute, stirring constantly.
Slowly whisk in the broth, milk, and heavy cream. Bring to a gentle simmer.
Add the broccoli, salt, pepper, and paprika. Cook for 10 to 12 minutes until the broccoli is tender.
Stir in the grated cheddar cheese until completely melted and smooth.
Serve warm, garnished with additional cheddar cheese and black pepper.
