Recipe Ingredients:

  • Enough champagne cookies
  • Strain coffee to moisten the cookies

Note: The amount of cookies will depend on the size of your dish, but it is usually about 7 to 10 ounces (200 to 300 grams).

For the cream:

  • 4 1/4 cups (1 liter) whole milk
  • 10.5 ounces (300 grams) mascarpone cheese – (300 g)
  • 1/2 cup (2.5 ounces) all-purpose flour – (70 g)
  • 1/2 cup (2.5 ounces) cornstarch – (70 g)
  • 2/3 cup (5 ounces) granulated sugar – (140 g)
  • 1 large egg yolk
  • 1 teaspoon vanilla sugar or liquid vanilla extract

For the topping:

  • Shredded coconut
  • Cocoa powder

Instructions:

Moisten the cookies in coffee and place them around the entire side of the glass dish, one next to the other. We recommend using a round dish, but if you don’t have one, use whatever is available.

In a saucepan, pour the milk and add the all-purpose flour, cornstarch, sugar, vanilla (sugar or extract), and egg yolk. Mix well until everything is dissolved.

Cook over medium heat, stirring constantly, until the mixture thickens and forms a smooth cream.

Add the mascarpone and stir until it is fully dissolved, and the cream is homogeneous.

Pour half of the cream into the dish with the cookies and smooth the surface. Moisten the cookies broken in half with coffee and distribute them over the cream, covering the entire surface.

Next, pour the remaining cream on top and finish with whole cookies moistened in coffee.

Cover the dish with plastic wrap and refrigerate. Let it chill overnight, or if prepared during the day, let it cool for at least 8 hours.

After the chilling time, unmold by flipping the dessert so the bottom becomes the top. Sprinkle shredded coconut over the entire dessert and then finish with cocoa powder.
