Cream Cheese Avocado Bacon Bites
Ingredients
For The Cream Cheese Avocado Bacon Filling:
- 2 8 ounces packages cream cheese, softened
- 3 large avocados diced small
- 1 pound bacon crisp and crumbled
- 1 c Sharp cheddar shredded
- 1 c Pepper Jack shredded
- ½ c diced jalapenos I used diced pickled jalapenos from a jar
- ½ c green onions sliced
- ½ c cilantro chopped
- ¼ c red onions diced
- 1 teaspoon garlic salt
- ½ teaspoon Cajun seasoning
- ½ teaspoon pepper
- 1 teaspoon lime juice
For The Coating:
- 1 c buttermilk
- 1 egg
- 1 c flour
- 1-2 c Panko bread crumbs
- 2 + c vegetable oil for frying

Start by frying the bacon until it becomes crispy. Once done let it drain on some paper towels and allow it to cool. Once cooled crumble the bacon into pieces.

Preparing the Filling: In a bowl beat the cream cheese until it becomes smooth. Then add in the bacon, shredded cheeses, jalapeños, green onions, cilantro, red onions, garlic salt, Cajun seasoning, pepper and lime juice. Mix everything well. Lastly gently fold in the avocados. Let this mixture chill, in the refrigerator for an hour.

Getting Ready with Coating: Arrange three bowls. One with flour in it; another with whisked buttermilk and egg mixture; and finally one with Panko breadcrumbs.

Shaping the Bites: Take a tablespoon of the chilled mixture. Shape it into a ball using your hands. Roll this ball in flour to coat it evenly dip it into the buttermilk mixture before coating it with breadcrumbs. Place each coated bite on a baking sheet.
