Cottage Cheese & Spinach Crustless Quiche
A healthy, protein-packed, low-carb quiche—perfect for breakfast, brunch, or a light dinner. No crust, no fuss, just flavor!
Ingredients
1½ cups cottage cheese
4 large eggs
1 cup sautéed spinach (fresh or frozen), squeezed dry
½ cup chopped onion (sautéed with the spinach)
½ cup shredded cheese (optional: cheddar, mozzarella, or feta)
Salt & pepper to taste
¼ tsp garlic powder (optional)
¼ tsp nutmeg (optional, adds depth of flavor)
Butter or oil to grease the baking dish
Instructions
Preheat Oven
Preheat your oven to 180°C (350°F). Lightly grease a pie dish or small baking pan.
Prepare the Filling
In a large bowl, whisk the eggs. Stir in the cottage cheese, sautéed spinach and onion, shredded cheese (if using), and seasonings.
Pour & Bake
Pour the mixture into the prepared dish. Bake for 35–40 minutes, or until the top is golden and the center is set.
Cool & Serve
Let cool for 10 minutes before slicing. Serve warm or chilled.
