Ingredients:
1 cup cottage cheese
1 cup almond flour
1 large egg
1/4 tsp garlic powder (optional, for flavor)
Pinch of salt (optional)
Instructions:
Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.
Blend the cottage cheese: Add the cottage cheese to a blender or food processor and blend until smooth. This helps create a uniform texture in your flatbread.
Mix the dough: In a mixing bowl, combine the blended cottage cheese, almond flour, egg, garlic powder, and salt if using. Stir until a thick batter forms.
Spread the batter: Pour the mixture onto the prepared baking sheet and use a spatula to spread it into a flat, even layer (about 1/4-inch thick). You can shape it into a rectangle, oval, or circle depending on your preference.
Bake for 20–25 minutes, or until the edges are golden brown and the center is set. For a crisper texture, you can bake it a few minutes longer.
Cool and serve: Let it cool for a few minutes, then slice and serve. Enjoy as-is or use it as a base for wraps, sandwiches, or mini pizzas!
