Coconut Lime Ice Cream
Ingredients:
– 1 can (14 oz) coconut milk
– 1 cup heavy cream
– 3/4 cup sugar
– 1/4 cup lime juice
– Zest of 1 lime
– 1/2 tsp vanilla extract
– Pinch of salt
Directions:
1. In a mixing bowl, whisk together the coconut milk, heavy cream, sugar, lime juice, lime zest, vanilla extract, and a pinch of salt until the sugar is fully dissolved. This is where the magic starts!
2. Pour that creamy goodness into your ice cream maker and churn as per the manufacturer’s instructions—usually about 20-25 minutes should do the trick.
