Classic Greek Salad (Quick Version)

Ingredients:

  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, sliced
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup green olives (or Kalamata)
  • 1/2 cup feta cheese, cubed
  • 2 tbsp parsley, chopped

Dressing:

  • 3 tbsp olive oil
  • 1 tbsp red wine vinegar or lemon juice
  • 1 tsp dried oregano
  • Salt & pepper to taste

Instructions:

1. Combine veggies, olives, and feta in a bowl.

2. Whisk dressing ingredients together.

3. Pour dressing over salad, toss gently.

4. Serve immediately or chill 15–20 mins.

Optional Add-ins: Bell peppers, capers, garlic powder.
