Ingredients:
- Four organic six-ounce boneless, skinless chicken breasts
- one lime, juiced and zest added
- one lime, sliced into wedges
- 1 tablespoon olive oil
- 1/2 cup chopped fresh cilantro
- 2 minced garlic cloves
- 1 tsp each of kosher salt and black pepper to taste
Directions:
- Using a mallet, pound the thicker part of the chicken breast until it is equal to the thinner end.
- Pour the juice from one lime, the zest from the lime, the olive oil, 1/4 cup chopped cilantro, the garlic, and salt into a big glass or ceramic container with a cover, or a freezer bag the size of a gallon.
- Give the chicken a thorough coating on both sides, then let it marinade in the fridge for at least an hour or up to overnight, rotating it halfway through.
- Grease a grill or grill pan and place over medium-to medium-high heat when you’re ready to cook.
- Cook for approximately five minutes on each side, or until the centre is cooked through and blackened.
Squeeze the remaining lime over the chicken after removing and placing it on a plate. Add the remaining fresh cilantro as a garnish.
Directions for an Air Fryer:
- Air fried for five minutes on each side in a single layer at 380 degrees.
