Chicken Ricotta Meatballs with Spinach Alfredo Sauce

Chicken Ricotta Meatballs with Spinach Alfredo Sauce
Ingredients
1 pound ground chicken
1/2 cup ricotta cheese
1/4 cup grated Parmesan cheese
1/4 cup breadcrumbs
1 egg
2 cloves garlic, minced
Heavy cream (for the sauce)
Cooked spinach (for the sauce)
Directions
1. Preheat your oven to 400°F (200°C). This will get things nice and toasty for your meatballs.
2. In a large bowl, mix together the ground chicken, ricotta cheese, Parmesan cheese, breadcrumbs, egg, and minced garlic. Just dive right in—clean hands work best for this!
3. Shape your mixture into small meatballs and line them up on a baking sheet, giving them a bit of space so they cook evenly.
4. Pop the tray into the oven and bake for 25 to 30 minutes, or until your meatballs turn golden brown and are fully cooked through.
5. For a cozy Spinach Alfredo Sauce, pour some heavy cream into a saucepan and warm it over medium heat. Add a generous sprinkle of Parmesan cheese and stir in your cooked spinach. Keep stirring until everything is melty and creamy.
6. Plate your meatballs and spoon that warm, creamy spinach Alfredo sauce over the top. Enjoy them on a bed of pasta, or just as they are for a comforting and delicious meal.
