Cheesy Rattlesnake Bites with a Spicy Kick
Golden, crispy, and loaded with creamy, spicy cheese—these bites are the perfect appetizer for any gathering! Ingredients:
Cheese Mixture:
1 lb cream cheese, softened
1 cup shredded cheddar cheese
1 cup shredded pepper jack cheese
1/2 cup diced jalapeños (fresh or pickled)
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp smoked paprika
1/4 tsp cayenne pepper (adjust for spice level)
For Breading:
1 cup all-purpose flour
2 large eggs, beaten
1 cup breadcrumbs
For Frying:

Prepare the Cheese Mixture:
In a large bowl, combine:
Cream cheese, cheddar cheese, and pepper jack cheese.
Diced jalapeños, garlic powder, onion powder, smoked paprika, and cayenne pepper.
Mix until all ingredients are evenly combined. Shape the Bites:
Using your hands, roll the cheese mixture into small balls (about 1 inch) in diameter.
Arrange the cheese balls on a baking sheet.
Refrigerate for at least 30 minutes to help them firm up. Set Up the Breading Station:
Prepare three shallow dishes:
Dish 1: All-purpose flour.
Dish 2: Beaten eggs.
Dish 3: Breadcrumbs. Heat the Oil:
In a deep fryer or large pot, heat vegetable oil to 350°F (175°C).
Make sure you have enough oil for the cheese balls to be fully submerged. Coat the Bites:
Remove the chilled cheese balls from the fridge.
Working one at a time:
Roll in flour (shake off excess).
Dip in beaten eggs.
Coat in breadcrumbs, ensuring they are fully covered. Fry the Bites:
Carefully drop the coated cheese balls into the hot oil, frying in batches.
Fry for 3-4 minutes or until they are golden brown and crispy.
