Cheesy Mashed Potato Puffs
Crispy on the outside, creamy on the inside—these little bites are the ultimate way to use up leftover mashed potatoes! Whether served as an appetizer, side dish, or party snack, they’re guaranteed to disappear fast. Ingredients
3 cups cold mashed potatoes
1 cup shredded cheddar cheese
1 egg
2 tbsp all-purpose flour
2 tbsp chopped chives
¼ tsp garlic powder (or to taste)
Salt & pepper, to taste
Grated Parmesan, for coating Instructions
Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
In a large bowl, combine mashed potatoes, cheddar, egg, chives, flour, garlic powder, and a pinch of salt and pepper. Mix well until fully combined.
Using your hands or a small scoop, form the mixture into 1½-inch balls.
Roll each ball in grated Parmesan cheese to coat evenly.
Arrange the puffs on the prepared baking sheet, leaving space between each.
Bake for 15–20 minutes, or until golden brown and crispy on the outside.
