Carrot Pineapple Smoothie
This smoothie is packed with vitamins, fiber, and a refreshing tropical flavor. The sweetness of pineapple perfectly balances the earthy notes of carrots, making it a delicious and nutritious treat.

Ingredients:
- 1 cup (about 2-3 medium) carrots, peeled and roughly chopped
- 1 cup frozen pineapple chunks (using frozen pineapple helps make the smoothie thicker and colder without adding ice)
- 1/2 ripe banana (fresh or frozen for extra creaminess)
- 1/2 – 1 cup liquid (choose one of the following, adjusting for desired consistency):
- Filtered water
- Coconut water (for a more tropical flavor)
- Orange juice (for extra citrusy sweetness)
- Almond milk or other plant-based milk (for a creamier texture)
- 1/2 inch fresh ginger, peeled and roughly chopped (optional, for a little zing)
- 1/2 tablespoon fresh lime or lemon juice (optional, brightens the flavors)
- Sweetener to taste (optional, only if needed):
- 1-2 dates, pitted
- 1 teaspoon maple syrup or honey
Equipment:

Instructions:
- Prepare the Carrots: Wash, peel, and roughly chop your carrots. If your blender isn’t super powerful, you might want to grate them or chop them into smaller pieces to ensure a smooth blend.
- Combine Ingredients: Add the chopped carrots, frozen pineapple chunks, banana, and ginger (if using) to your blender.
- Add Liquid: Pour in 1/2 cup of your chosen liquid. You can always add more later if needed to achieve your desired consistency.
- Add Optional Flavor Boosters: If using, add the fresh lime/lemon juice and any desired sweetener (dates, maple syrup, or honey).
- Blend: Secure the lid on your blender and start blending on a low speed, gradually increasing to high. Blend until the mixture is completely smooth and creamy, with no noticeable chunks of carrot. You may need to stop the blender and scrape down the sides with a spatula a few times to ensure everything is incorporated.
- Adjust Consistency: If the smoothie is too thick, add more liquid, a tablespoon at a time, and blend again until you reach your preferred consistency. If it’s too thin, you can add a few more frozen pineapple chunks or a handful of ice and blend again.
- Taste and Adjust: Taste the smoothie and adjust the sweetness or tartness as needed. You can add more lime/lemon juice for brightness or a bit more sweetener if it’s not sweet enough for your liking.
- Serve: Pour the smoothie into a tall glass.
Garnish (as seen in the image):
- A slice of fresh pineapple on the rim of the glass.
- A few small diced pieces of fresh pineapple or carrot on top.
Tips for Success:
- For a colder smoothie: Use all frozen fruit (pineapple and banana). You can also add a few ice cubes if your fruit isn’t completely frozen.
- For a thicker smoothie: Use less liquid, or add more frozen fruit or a scoop of chia seeds or rolled oats (which will also add fiber!).
- For a thinner smoothie: Add more liquid gradually until you reach your desired consistency.
- Make ahead: While best enjoyed fresh, you can store this smoothie in an airtight container in the refrigerator for up to 24 hours. Give it a good shake or re-blend briefly before serving.
- Boost the nutrition: Consider adding a scoop of your favorite protein powder, collagen peptides, or a handful of spinach (you won’t taste it much!).
