Ingredients
- 1 lb lean ground beef
- 1 (15 oz) can black beans, rinsed and drained
- 1 (10 oz) can enchilada sauce
- 1 (16 oz) can refrigerator biscuits
- 1 1/2 cups shredded Mexican Cheese blend
- Kosher salt and freshly ground black pepper, to taste
For serving:
- Sour cream, as needed
- Green onions, sliced, as needed
Preparation
- Preheat oven to 350°F and grease an 8×11-inch baking dish with nonstick spray.
- In a large skillet over medium-high heat, season ground beef with salt and pepper and brown until no longer pink. Drain fat, if needed.
- Stir in enchilada sauce and black beans and pour mixture into baking dish.
- Cut each biscuit into quarters and add to ground beef mixture. Gently stir to combine, making sure biscuit dough is arranged evenly across the dish.
- Bake until biscuits are cooked through, about 25 minutes. Top with cheese and return to oven for 10 minutes more. Let sit 5 minutes before serving. Enjoy!
