Bruschetta Chicken Tortellini Pasta Salad
Ingredients
For the Salad
- 1 (20 oz) package refrigerated cheese tortellini
- 2 cups cooked chicken breast, diced (grilled for best flavor)
- 2 cups cherry or grape tomatoes, quartered
- ½ cup fresh basil, chopped
- ½ cup Parmesan cheese, shredded
- 2 tbsp red onion, finely diced (optional)
For the Dressing
- ¼ cup extra virgin olive oil
- 3 tbsp balsamic vinegar
- 2 cloves garlic, minced
- 1 tsp Italian seasoning
- 1 tsp honey (optional, balances acidity)
- Salt & freshly cracked black pepper, to taste
Instructions
Cook Tortellini
Bring a large pot of salted water to a boil.
Cook tortellini according to package instructions until tender.
Drain and rinse under cold water to stop the cooking process.
Make Dressing
In a small bowl or jar, whisk together olive oil, balsamic vinegar, garlic, Italian seasoning, honey (if using), salt, and pepper.
Assemble Salad
In a large bowl, add tortellini, chicken, tomatoes, basil, Parmesan, and onion.
Pour dressing over the salad and toss gently to combine.
Chill & Serve
For best flavor, cover and refrigerate for at least 30 minutes before serving.
Garnish with extra basil and Parmesan if desired.
Optional Add-Ins: Fresh mozzarella pearls, balsamic glaze drizzle, or chopped spinach for extra greens.
