Breakfast Muffins
Ingredients:
1 1/2 cups all-purpose flour
1/2 cup sugar
2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1/2 cup milk
1/4 cup vegetable oil
1 large egg
1 tsp vanilla extract
1/2 cup rolled oats
1/2 cup fruit (blueberries, bananas, or apples)
Preparation:
Preheat oven to 350°F (175°C) and grease a muffin tin.
In a bowl, mix flour, sugar, baking powder, baking soda, and salt.
In another bowl, whisk together milk, oil, egg, and vanilla.
Combine wet and dry ingredients, then fold in oats and fruit.
Spoon batter into muffin tin and bake for 18-20 minutes, or until a toothpick comes out clean.
