Boston Cream Pie Cookie Bites

Delightful mini treats featuring soft cookies, creamy filling, and a rich chocolate topping!

Cookies:
1 cup butter, softened
1 cup sugar
2 eggs
1 teaspoon vanilla extract
2 1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt

Cream Filling:
1 cup milk
1/4 cup sugar
2 tablespoons cornstarch
1/4 teaspoon salt
2 egg yolks
1 teaspoon vanilla extract

Chocolate Topping:
1 cup semi-sweet chocolate chips
1/2 cup heavy cream

Directions:
Cookies:
Preheat oven to 350°F (175°C).
In a large bowl, beat butter and sugar until smooth.
Add eggs and vanilla, beating well.
Stir in flour, baking powder, and salt. Mix until dough forms.
Shape dough into balls and place on baking sheet. Flatten slightly.
Bake for 10-12 minutes. Let cool.

Cream Filling:
In a saucepan, mix milk, sugar, cornstarch, and salt.
Cook over medium heat, stirring constantly, until thickened.
In a small bowl, beat egg yolks. Add a little of the hot mixture to the yolks, then return to saucepan.
Cook for 2 more minutes. Remove from heat and stir in vanilla. Let cool.

Chocolate Topping:
In a bowl, microwave chocolate chips and heavy cream in 30-second intervals, stirring between each, until smooth.

Assembly:
Place a spoonful of the cream filling on one cookie and top with another cookie.
Dip the top into chocolate frosting. Let cool until chocolate is firm.
