Beet Salad with Avocado and Feta
Ingredients:
- 3 medium beets, roasted and cubed (or pre-cooked beets)
- 1 ripe avocado, diced
- 1/4 cup crumbled feta cheese
- 1/4 cup walnuts or pecans, toasted
- 1 handful of mixed greens (arugula, spinach, or lettuce)
- 1 tbsp olive oil
- 1 tbsp balsamic vinegar
- 1 tsp honey or maple syrup
- Salt and pepper to taste
Instructions:
- If roasting your own beets, preheat the oven to 400°F (200°C). Wrap the beets in foil and roast for 45-60 minutes until tender. Let cool, then peel and cube.
- In a small bowl, whisk together olive oil, balsamic vinegar, honey, salt, and pepper.
- In a large bowl, combine the roasted beets, diced avocado, mixed greens, and toasted walnuts.
- Drizzle the dressing over the salad and toss gently to combine.
- Top with crumbled feta cheese and serve immediately.
