Prepare the Beef:
Season the beef strips with salt and pepper. Heat 1 tbsp of vegetable oil in a wok or skillet over high heat.

Add the remaining oil to the wok. Stir-fry the onion and bell peppers for 3–4 minutes until slightly softened.
Make the Sauce:
In a small bowl, mix soy sauce, oyster sauce, sesame oil, garlic, ginger, and the cornstarch slurry.
Combine Everything:
Return the beef to the wok. Pour the sauce over the mixture and stir well.
Cook for 2–3 minutes until the sauce thickens and coats the beef and vegetables.
