  • For the BBQ Chicken:

  • ¼ cup butter
  • 2 cloves garlic, minced
  • 2 teaspoons parsley, minced
  • 12 slices sourdough or sturdy white bread

Instructions

  • Prepare the BBQ Chicken:
  • Heat olive oil in a large skillet over medium heat.
  • Add onions and cook until soft, about 2 minutes.
  • Stir in garlic and cook until fragrant, about 30 seconds.
  • Mix in the shredded chicken, paprika, Worcestershire sauce, and BBQ sauce. Stir to combine and heat through for about 2-3 minutes.
  • Make the Garlic Butter Bread:
  • In a medium bowl, combine butter, garlic, and parsley. Microwave until the butter is melted.
  • Lay out 12 slices of bread on a work surface and evenly spread the melted butter mixture on each slice.
  • Assemble and Cook the Sandwiches:
  • Turn each slice of bread over so the buttered side is down. On 6 of these slices, layer a slice of Havarti cheese, followed by an even distribution of the BBQ chicken mixture, and another slice of cheese.
  • Top with the remaining bread slices, ensuring the buttered side is facing out.
  • Heat a large non-stick skillet over medium heat. Place the sandwiches in the skillet and cook until the bottoms are golden brown, about 3-5 minutes.
  • Carefully flip the sandwiches, reduce heat to medium-low, and continue cooking until the second side is browned and the cheese is melted, another 3-5 minutes.
