Ingredients (for 2 servings):
2 ripe bananas
2 tablespoons peanut butter (sugar and palm oil free)
250 ml milk (can be plant-based: coconut, almond, oat milk)
3 tablespoons chia seeds
1 tablespoon honey or maple syrup
1/2 teaspoon vanilla extract (optional)
A few nuts to sprinkle on top (e.g. almonds, walnuts, hazelnuts)
Preparation:
1️⃣ Blend the base
✔️ Place the bananas, peanut butter, milk, honey and vanilla extract in a blender and mix until smooth.
2️⃣ Add chia seeds
✔️ Pour the mixture into a bowl or glass and add chia seeds.
✔️ Mix everything well and let it rest for 5 minutes. Then stir again (to avoid lumps).
3️⃣ Cooling
✔️ Leave in the fridge for 3-4 hours, preferably overnight, to allow the chia seeds to swell and the pudding to thicken.
4️⃣ Decorate and serve
✔️ Pour the pudding into glasses and garnish with banana slices, chopped nuts and a little peanut butter.
