Ingredients:
2 ripe bananas (mashed)
1 cup rolled oats (blended into flour)
1 cup cottage cheese
2 eggs
1 tsp cinnamon
1 tsp vanilla extract
1 tsp baking powder
Pinch of salt
Optional: chopped walnuts or dark chocolate chips
Nutrition (per slice):
High in protein, fiber, and potassium — naturally sweetened with bananas.
Directions:
Preheat oven to 350°F (175°C) and line a loaf pan with parchment paper.
In a blender, combine cottage cheese, eggs, bananas, and vanilla until smooth.
Add oat flour, baking powder, cinnamon, and salt. Blend until fully mixed.
Fold in nuts or chocolate chips if using.
Pour into loaf pan and smooth the top.
Bake until golden and a toothpick comes out clean.
Let it cool before slicing — it gets even better the next day!
Serving & Storing Tips:
Serve with a drizzle of nut butter or a few fresh banana slices. Store in the fridge for up to 5 days or freeze individual slices for a quick grab-and-go breakfast!
