Ingredients:
For the Pancakes:
1 ½ cups all-purpose flour
2 tablespoons sugar
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 ¼ cups buttermilk
2 large eggs
2 tablespoons melted butter
1 teaspoon vanilla extract
2 ripe bananas, mashed
For the Banana Foster Sauce:
2 tablespoons unsalted butter
1/4 cup brown sugar, packed
1/4 teaspoon ground cinnamon
2 ripe bananas, sliced
1/4 cup dark rum (optional)
1/4 cup heavy cream
Pinch of salt
Instructions:
1. Make the Pancakes:
In a large bowl, combine flour, sugar, baking powder, baking soda, and salt.
In another bowl, whisk together the buttermilk, eggs, melted butter, and vanilla extract.
Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix.
Fold in the mashed bananas.
Heat a griddle or skillet over medium heat and lightly grease with butter or cooking spray.
Pour about 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, then flip and cook for another 1-2 minutes until golden brown and cooked through.
Remove the pancakes from the pan and keep warm.
2. Make the Banana Foster Sauce:
In a skillet over medium heat, melt the butter.
Add the brown sugar and cinnamon, stirring until the sugar is dissolved and the mixture begins to bubble.
Add the sliced bananas and cook for 1-2 minutes, until the bananas soften slightly.
If using rum, carefully add it to the pan and let it cook for 1-2 minutes until the alcohol evaporates.
Stir in the heavy cream and a pinch of salt, cooking for an additional 1-2 minutes until the sauce thickens slightly.
3. Assemble:
Stack your pancakes on plates.
Spoon the warm banana foster sauce over the pancakes.
Optionally, you can garnish with whipped cream or a dusting of powdered sugar.
Serve these Banana Foster Pancakes immediately for a decadent breakfast or brunch
