- 2 pounds Yukon Gold potatoes (or other preferred variety)
- 3–4 cloves fresh garlic, minced
- 1/2 cup fresh squeezed lemon juice

- 1 tablespoon dried oregano
- 1 teaspoon salt

Instructions
- Preheat the oven to 425°F.
- Peel and cut the potatoes into wedges.
