A savory, Mediterranean-inspired breakfast or snack packed with protein, healthy fats, and bold flavor — perfect for blood sugar balance!

Ingredients (Serves 2):

  • 4 hard-boiled eggs, halved (~28g protein total)
  • ½ cup crumbled feta cheese (~10g protein, 1g carbs)
  • 1 tbsp olive oil
  • ½ tsp garlic powder
  • ½ tsp dried oregano
  • ¼ tsp black pepper

Directions:

Preheat oven to 375°F (190°C).

In a small baking dish, arrange egg halves cut-side up.

Sprinkle with feta, drizzle with olive oil, and season with garlic powder, oregano, and black pepper.

Bake for 10–12 minutes, until feta is golden and eggs are warmed through.

Optional: Garnish with fresh herbs (parsley, dill)
