Avocado Spinach Matcha Smoothie

This vibrant green smoothie is packed with nutrients, healthy fats, and a boost of antioxidants from matcha.

Yields: 1 serving Prep time: 5 minutes

Ingredients:

  • 1/2 ripe avocado, pitted and peeled
  • 1 cup fresh spinach
  • 1-2 teaspoons matcha powder (adjust to your taste preference)
  • 1/2 frozen banana (or fresh banana if you prefer a less thick smoothie)
  • 1/4 cup raw almonds
  • 1/4 cup raw cashews (or a mix of your favorite nuts)
  • 1/2 cup unsweetened almond milk (or your preferred milk)
  • 1/2 cup ice cubes (optional, for a colder and thicker smoothie)
  • Sweetener to taste (optional: honey, maple syrup, dates, or stevia)
  • Crushed nuts for garnish (optional)

Instructions:

  1. Combine ingredients: Add the spinach, avocado, banana, matcha powder, almonds, cashews, and almond milk to a high-speed blender.
  2. Blend until smooth: Blend on high until the mixture is completely smooth and creamy. If you’re using ice, add it now and blend again until incorporated.
  3. Adjust consistency: If the smoothie is too thick, add a little more almond milk until it reaches your desired consistency. If it’s too thin, add a few more ice cubes or a bit more frozen banana.
  4. Taste and sweeten (optional): Taste the smoothie and add your preferred sweetener if desired, blending again briefly to combine.
  5. Pour and serve: Pour the smoothie into a tall glass.
  6. Garnish (optional): Top with a sprinkle of crushed nuts for added texture and flavor.
  7. Enjoy immediately!

Tips and Variations:

  • Protein Boost: Add a scoop of your favorite protein powder (vanilla or unflavored would work well).
  • More Greens: Feel free to add other greens like kale for an extra nutritional punch.
  • Superfood Boost: Chia seeds, flax seeds, or hemp hearts can be added for omega-3s and fiber.
  • Fruity Twist: A few pineapple chunks or mango can add a tropical flavor.
  • Nut-Free: If you have a nut allergy, you can omit the nuts and use an equal amount of seeds (like sunflower or pumpkin seeds) or just increase the amount of avocado and banana for creaminess.
  • Sweetness Level: The sweetness will depend on the ripeness of your banana and your personal preference.
  • Matcha Quality: Using a high-quality ceremonial or culinary grade matcha will give you the best flavor and color.
