Avocado Ice Cream

Ingredients
2 ripe avocados, peeled and pitted
1 cup heavy cream
1/2 cup whole milk
1/2 cup sugar (or adjust to taste)
1 tbsp lime juice (optional, for a tangy twist)
1 tsp vanilla extract
A pinch of salt
Directions
In a blender or food processor, combine the ripe avocados, heavy cream, whole milk, sugar, lime juice (if using), vanilla extract, and salt. Blend until smooth and creamy, ensuring that there are no avocado lumps.
Taste the mixture and adjust the sweetness by adding more sugar if needed.
Pour the avocado mixture into an ice cream maker and follow the manufacturer’s instructions for churning. Typically, it takes about 20-30 minutes.
Once the ice cream has thickened and reached a creamy consistency, transfer it to a container and place it in the freezer for at least 3 hours to firm up.
When ready to serve, scoop into bowls or cones. Optionally, garnish with chopped pistachios, a drizzle of honey, or a squeeze of lime juice for extra flavor.
