Ingredients

For the Pie Crust (makes top & bottom)

  • 2 ½ cups (315 g) all-purpose flour
  • 1 tsp salt
  • 1 tsp sugar
  • 1 cup (225 g) unsalted butter, cold and cubed
  • 6–8 tbsp ice-cold water

(You can also use 2 store-bought pie crusts if short on time.)

For the Apple Filling

  • 6–7 medium apples (Granny Smith + Honeycrisp mix works best)
  • ¾ cup (150 g) granulated sugar
  • ¼ cup (50 g) brown sugar
  • 2 tbsp all-purpose flour (to thicken)
  • 1 tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • 1 tbsp lemon juice
  • 1 tsp vanilla extract
  • 2 tbsp unsalted butter, cut into small pieces

For Topping

  • 1 egg (beaten with 1 tbsp water, for egg wash)
  • 1 tbsp coarse sugar (optional, for sprinkling)

Instructions

1. Make the Crust

  1. In a bowl, whisk flour, salt, and sugar.
  2. Cut in cold butter until mixture resembles coarse crumbs.
  3. Add ice water gradually, mixing until dough just comes together.
  4. Divide into 2 discs, wrap in plastic, and refrigerate at least 1 hour.

2. Prepare the Filling

  1. Peel, core, and slice apples thinly.
  2. In a bowl, toss apples with sugars, flour, cinnamon, nutmeg, lemon juice, and vanilla.
  3. Let sit for 15 minutes so juices release.

3. Assemble the Pie

  1. Preheat oven to 425°F (220°C).
  2. Roll out 1 dough disc into a circle and fit into a 9-inch pie dish.
  3. Fill with apple mixture, mounding slightly in the center.
  4. Dot with butter pieces.
  5. Roll out the second dough disc and place on top (or cut strips for a lattice crust).
  6. Seal and crimp edges. Cut small slits in the top crust for steam.
  7. Brush with egg wash and sprinkle with sugar if desired.

4. Bake

  1. Bake at 425°F (220°C) for 15 minutes.
  2. Reduce heat to 375°F (190°C) and bake another 40–45 minutes, until golden brown and bubbly.

5. Cool & Serve

  • Let pie cool at least 2 hours before slicing (filling sets as it cools).
