Apple Pie with Soufflé Cream

 

Ingredients:

 

For the Dough:

 

  • 250g flour
  • 1 tsp baking powder ✨
  • 90g butter
  • Pinch of salt
  • 2 egg yolks
  • 40g sugar

 

For the Apple Layer:

 

3 apples (~500g)

40g sugar

4-5 tbsp lemon juice

For the Soufflé Cream:

2 egg whites

40g sugar

1 tsp vanilla sugar

400g natural yogurt (or sour cream)

30g cornstarch

Instructions:

1️⃣ Make the Dough: Combine flour, baking powder, butter, salt, egg yolks, and sugar into a smooth dough. Press it into a 20 cm pie pan.

2️⃣ Apple Layer: Slice apples, mix with sugar and lemon juice, and layer on the dough. Bake at 170°C (338°F) for 40-45 minutes until apples are tender.

3️⃣ Prepare Soufflé Cream: Beat egg whites with sugar and vanilla sugar until stiff peaks form. Mix yogurt (or sour cream) with cornstarch and gently fold in the egg whites.

4️⃣ Assemble & Chill: Spread the soufflé cream over the baked apple pie. Chill before serving.
