Healthy Carrot Oat Cake Recipe
Ingredients:

1 cup rolled oats

1 large carrot, grated
-
2 eggs
-
1 ripe banana (or 1/3 cup honey or maple syrup)

1/2 cup raisins or chopped nuts (optional)

1/2 cup milk (dairy or plant-based)
-
1/2 tsp baking soda
-
1/2 tsp cinnamon
-
Pinch of salt
-
Optional: 1/2 tsp vanilla extract
Instructions:

Preheat oven to 180°C (350°F). Grease a baking pan or line it with parchment paper.

Grate the carrot finely.

In a large bowl, mash the banana (if using). Add eggs and milk, and mix well.

Add grated carrot, oats, raisins or nuts, cinnamon, baking soda, salt, and vanilla (if using). Mix until well combined.

Pour the batter into the prepared pan and spread evenly.

Bake for 30–40 minutes, or until a toothpick inserted in the center comes out clean.

Let it cool before slicing.
