Grilled Pineapple Chipotle Salmon
Ingredients:
- 4 salmon fillets (about 6 oz each, skin-on or off)
- 1 cup fresh pineapple, chopped
- 2 tablespoons chipotle peppers in adobo sauce, minced
- 2 tablespoons honey
- 1 tablespoon lime juice
- 2 tablespoons olive oil
- 1 garlic clove, minced
- ½ teaspoon ground cumin
- Salt and black pepper, to taste
- Fresh cilantro, chopped (for garnish)
- Lime wedges, for serving
Directions:
In a blender or food processor, combine the pineapple, chipotle peppers, honey, lime juice, olive oil, garlic, cumin, salt, and pepper. Blend until smooth and set aside.
Preheat your grill to medium-high heat and lightly oil the grates.
Pat the salmon fillets dry and season lightly with salt and pepper.
Brush a layer of the pineapple chipotle sauce over the salmon fillets, reserving some sauce for later.
Grill the salmon, skin-side down first if skin-on, for 4–5 minutes per side, or until it flakes easily with a fork.
During the last minute of cooking, brush again with more sauce to caramelize.
Remove from grill, garnish with fresh cilantro, and serve with lime wedges and any remaining sauce on the side.
