Moist Carrot Zucchini Muffins 
Ingredients:
1 cup grated zucchini
1 cup grated carrots
2 cups all-purpose flour
1/2 cup brown sugar
1/2 cup white sugar
1/2 cup vegetable oil
2 eggs
1 tsp vanilla extract
1 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp salt
1 tsp baking soda
1/2 cup walnuts (optional)
1/2 cup raisins (optional)
Instructions:

Preheat oven to 350°F (175°C). Prepare muffin tin with liners.
Mix eggs, sugars, oil, and vanilla until smooth.
In a separate bowl, whisk flour, baking soda, salt, cinnamon, and nutmeg.
Gradually add dry ingredients to wet ingredients, stirring until combined.

Fold in grated zucchini, carrots, walnuts, and raisins.
Fill muffin liners and bake for 18-22 minutes.
Allow to cool before serving.
