Zucchini Lasagna Bites

Ingredients:

  • 2 large zucchinis, thinly sliced
  • 1 cup ricotta cheese
  • 1 egg
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese
  • Olive oil for greasing

Instructions:

  1. Preheat the Oven: Preheat your oven to 375°F (190°C) and lightly grease a muffin tin with olive oil.
  2. Slice the Zucchinis: Using a mandoline or sharp knife, slice the zucchinis lengthwise into thin strips. Set aside.
  3. Prepare the Ricotta Mixture: In a medium bowl, combine the ricotta cheese, egg, Parmesan cheese, basil, oregano, garlic powder, salt, and black pepper. Mix well.
  4. Assemble the Lasagna Bites: Place one zucchini slice at the bottom of each muffin tin cup. Add a spoonful of the ricotta mixture, followed by a dollop of marinara sauce and a sprinkle of mozzarella cheese.
  5. Layer the Ingredients: Continue layering the zucchini slices, ricotta mixture, marinara sauce, and mozzarella cheese, finishing with a layer of mozzarella on top.
  6. Bake: Bake for 20-25 minutes, or until the tops are golden and bubbly.
  7. Cool and Serve: Let the lasagna bites cool for a few minutes before removing them from the muffin tin. Serve warm and enjoy!
