Zucchini Garlic Bites Recipe
Ingredients:

1 cup shredded zucchini (squeezed to remove excess water)

1 large egg

1/4 cup grated Parmesan cheese

1/4 cup homemade low-carb breadcrumbs (or almond flour for keto)

2 cloves garlic, minced

1 tablespoon fresh parsley, chopped (or 1 tsp dried)

1/2 teaspoon dried oregano

1/4 teaspoon salt (adjust to taste)

1/4 teaspoon black pepper

Olive oil spray (for baking sheet or air fryer basket)
Instructions:

Prep the zucchini

Grate the zucchini using a box grater.

Place it in a clean towel or cheesecloth and squeeze out as much liquid as possible. This step is very important to prevent soggy bites.

Mix the batter

In a medium bowl, combine zucchini, egg, Parmesan, breadcrumbs, garlic, parsley, oregano, salt, and pepper.

Mix until a sticky dough forms.

Shape the bites

Scoop about 1 tablespoon of mixture at a time.

Roll into small balls or shape into patties.

Bake or Air Fry

Baking: Preheat oven to 200°C (400°F). Line a baking sheet with parchment paper and lightly spray with olive oil. Place bites on sheet and bake for 15–18 minutes, flipping halfway, until golden brown.

Air Fryer: Preheat to 190°C (375°F). Place bites in basket in a single layer. Air fry for 10–12 minutes, shaking halfway.
