Zucchini Garlic Bites Recipe

Ingredients:

  • 1 cup shredded zucchini (squeezed to remove excess water)

  • 1 large egg

  • 1/4 cup grated Parmesan cheese

  • 1/4 cup homemade low-carb breadcrumbs (or almond flour for keto)

  • 2 cloves garlic, minced

  • 1 tablespoon fresh parsley, chopped (or 1 tsp dried)

  • 1/2 teaspoon dried oregano

  • 1/4 teaspoon salt (adjust to taste)

  • 1/4 teaspoon black pepper

  • Olive oil spray (for baking sheet or air fryer basket)


Instructions:

  1. Prep the zucchini

    • Grate the zucchini using a box grater.

    • Place it in a clean towel or cheesecloth and squeeze out as much liquid as possible. This step is very important to prevent soggy bites.

  2. Mix the batter

    • In a medium bowl, combine zucchini, egg, Parmesan, breadcrumbs, garlic, parsley, oregano, salt, and pepper.

    • Mix until a sticky dough forms.

  3. Shape the bites

    • Scoop about 1 tablespoon of mixture at a time.

    • Roll into small balls or shape into patties.

  4. Bake or Air Fry

    • Baking: Preheat oven to 200°C (400°F). Line a baking sheet with parchment paper and lightly spray with olive oil. Place bites on sheet and bake for 15–18 minutes, flipping halfway, until golden brown.

    • Air Fryer: Preheat to 190°C (375°F). Place bites in basket in a single layer. Air fry for 10–12 minutes, shaking halfway.

  5. Serve

    • Enjoy warm with marinara sauce, ranch, or garlic yogurt dip!
