  • Crispy Wood Sticks! Oil-Free and Delicious Zucchini Recipe

Crispy Wood Sticks! Oil-Free and Delicious Zucchini Recipe

Imagine biting into a crispy snack that’s not only delicious but also guilt-free. With our oil-free crispy wood sticks recipe, made from wholesome zucchinis, you can indulge your cravings without compromising your health. Let’s dive into how to create this delectable treat!

    Ingredients Breakdown

To whip up a batch of these delightful wood sticks, you’ll need:

    • 2 zucchinis (approximately 700 g)
    • 2/3 teaspoon of salt
    • 1-2 eggs (depending on size)
    • 4 tablespoons of breadcrumbs
    • 1 teaspoon of garlic powder or granules
    • A pinch of black pepper
    • 1 teaspoon of ground red pepper
    • 1/2 teaspoon of oregano
    • 2 tablespoons of flour
    • 70 g of hard cheese
    Preparing the Zucchini

Start by prepping the zucchinis. If they’re young with thin skin, no need to peel them. However, for thicker-skinned zucchinis, peeling is recommended. Cut off both ends and slice them in half lengthwise, then into thin strips resembling chicken fingers. Sprinkle with salt and let them drain for 10 minutes.

    Creating the Coating

While the zucchinis are draining, prepare the coating mixture. Combine breadcrumbs, garlic powder, black pepper, red pepper, oregano, and grated hard cheese in a bowl. This flavorful blend will give your wood sticks a delightful aroma and crunch.

    Baking Process

Once the zucchinis have drained, coat them in flour for extra crispiness. Dip each stick in beaten egg, then coat generously with the breadcrumb mixture. Arrange them on a baking tray lined with parchment paper and bake at 200 degrees Celsius for approximately 25 minutes until golden and crispy.

    Making the Sauce

Enhance the flavor experience by pairing your wood sticks with a zesty sauce. Mix sour cream with finely chopped dill and minced garlic for a tangy and aromatic accompaniment.

    Serving Suggestions

Serve your crispy wood sticks hot with the homemade sauce on the side. They make for a delightful appetizer, snack, or even a light meal when paired with a fresh salad.

    Health Benefits

Unlike traditional fried snacks, these oil-free wood sticks offer a healthier alternative without compromising on taste. Zucchinis are rich in vitamins and minerals while being low in calories, making them a nutritious choice for snacking.

  • Crab Cake Egg Rolls

    Crab Cake Egg Rolls

The moment I tasted these, I knew I couldn’t stop at just 1!

Crab Cake Egg Rolls are a delightful fusion dish that combines the succulent flavors of traditional Maryland crab cakes with the crispy, golden exterior of Chinese egg rolls.

This dish reflects the beauty of culinary diversity, showcasing how different food cultures can merge to create something unique and delicious.

The egg roll, with its origins deeply rooted in Chinese cuisine, becomes a vessel for the crab cake, a staple in American cooking, especially along the Eastern Seaboard.

Making this dish offers an exciting twist for those who love crab cakes but are looking for a different way to enjoy the flavors and textures.

Whether you’re serving these at a party or as an enjoyable family meal, Crab Cake Egg Rolls will surely make a tasty impression.

To complement the rich flavors of the Crab Cake Egg Rolls, consider dipping sauces like spicy aioli, classic tartar sauce, or a sweet and tangy Asian sauce.

A fresh, zesty coleslaw or a light cucumber salad would also make perfect accompaniments, cutting through the richness of the fried rolls.

For a heartier meal, pairing these egg rolls with a side of jasmine rice or stir-fried vegetables can create a balanced and satisfying experience.

    Ingredients

1 cup crab meat, fresh or canned, thoroughly drained
    1/4 cup breadcrumbs
    1 tablespoon mayonnaise
    1 teaspoon Worcestershire sauce
    1 teaspoon old bay seasoning
    1 teaspoon Dijon mustard
1 egg, beaten (for the crab cake mixture)
    1 tablespoon fresh parsley, chopped
    1/2 teaspoon lemon zest
    6 egg roll wrappers
1 egg, beaten (for sealing the egg rolls)
    Oil, for frying

    Directions

    1. In a medium-sized bowl, combine the crab meat, breadcrumbs, mayonnaise, Worcestershire sauce, old bay seasoning, Dijon mustard, beaten egg, parsley, and lemon zest. Mix until all the ingredients are well incorporated.

    2. Lay an egg roll wrapper flat on a clean surface. Spoon approximately two tablespoons of the crab mixture onto the center of the wrapper.

    3. Brush the edges of the wrapper lightly with the beaten egg (for sealing). Fold in the sides and roll the wrapper tightly, making sure to seal the ends well to prevent the filling from leaking while frying.

    4. Heat oil in a deep skillet or deep fryer to 350°F (175°C). Fry the egg rolls in batches, being careful not to overcrowd the pan, until they are golden brown and crispy, approximately 2 to 3 minutes per side.

    5. Transfer the fried egg rolls to a paper towel-lined plate to drain excess oil.

    6. Serve hot with your choice of dipping sauce and sides.

    Variations & Tips

    – For a gluten-free option, use gluten-free breadcrumbs and check that your egg roll wrappers are certified gluten-free.
    – To reduce the fat content, bake the egg rolls in a preheated oven at 425°F (220°C) for 15-20 minutes, or until they are crispy and golden, turning them halfway through cooking.

    – If you prefer a bit of heat, add a pinch of cayenne pepper to the crab mixture or include some finely chopped jalapeño.
    – Always ensure the crab meat is fully drained to prevent a soggy filling, which can also lead to your egg rolls not sealing properly.
    – Make sure the oil is at the correct temperature before frying to ensure a crispy exterior and prevent the egg rolls from absorbing too much oil.

    2. Set up three shallow dishes: one with flour mixed with 1 teaspoon salt and black pepper, one with eggs and milk whisked together, and one with breadcrumbs mixed with paprika, garlic powder, and the remaining 1 teaspoon salt.
    3. Dredge each chicken breast in the flour, shaking off any excess. Dip into the egg mixture, then coat with the breadcrumb mixture, pressing to adhere.
    4. Heat the vegetable oil in a large skillet over medium-high heat. Once hot, add the chicken breasts and cook for 3-4 minutes on each side, or until golden brown and cooked through.
    5. Transfer the chicken to a paper towel-lined plate to drain any excess oil.
    6. Serve with lemon wedges for a fresh squeeze of juice over the top.

    INGREDIENTS:

To create this delectable Garlic Parmesan Roasted Shrimp, you will need the following ingredients:

    • 1 pound large shrimp, peeled and deveined
    • 3 tablespoons olive oil
    • 4 cloves garlic, minced
    • 1/2 cup grated Parmesan cheese
    • 1/4 cup breadcrumbs (preferably Panko for extra crunch)
    • 2 tablespoons fresh parsley, chopped
    • 1 teaspoon lemon zest
    • 1/2 teaspoon salt
    • 1/4 teaspoon black pepper
    • Lemon wedges for serving

    INSTRUCTIONS:

    1. Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it to prevent sticking.
    2. Prepare the Shrimp: Rinse the shrimp under cold water and pat them dry with paper towels. Place the shrimp in a large mixing bowl.
    3. Make the Garlic Parmesan Mixture: In a separate bowl, combine the olive oil, minced garlic, grated Parmesan cheese, breadcrumbs, chopped parsley, lemon zest, salt, and black pepper. Mix well to form a cohesive mixture.
    4. Coat the Shrimp: Add the garlic Parmesan mixture to the bowl with the shrimp. Toss the shrimp until they are evenly coated with the mixture. Ensure that each shrimp is well-covered for maximum flavor.
    5. Arrange on Baking Sheet: Spread the coated shrimp in a single layer on the prepared baking sheet. Make sure they are not overcrowded to allow for even roasting.
    6. Roast the Shrimp: Place the baking sheet in the preheated oven and roast the shrimp for 8-10 minutes, or until they are pink, opaque, and cooked through. The breadcrumbs should be golden and crispy, adding a delightful crunch to the dish.
    7. Finish and Serve: Once the shrimp are perfectly roasted, remove the baking sheet from the oven. Transfer the shrimp to a serving platter and garnish with additional chopped parsley and lemon wedges. The fresh lemon juice enhances the flavors and adds a bright, tangy note.
