    Meat:

    •  4 oz Bacon
    • 3 lbs Beef (such as chuck roast or brisket)

    Fruits & vegetables:

    •  2 Bay leaves
    •  1 cup Carrot, chopped
    •  1 cup Celery, chopped
    •  1 tbsp Garlic, minced
    •  1 cup Onion, chopped
    •  1 sprig Rosemary
    •  1 sprig Thyme
    •  1 (14.5 ounce) can Tomatoes, diced or crushed

    Preserves:

    •  2 cups Beef broth

    Culinary aids and spices:

    • 1 tsp Italian seasoning
    • 1/2 tsp Red pepper flakes (adjust to taste)
    • Salt and pepper, to taste

    Instructions:

    1. Preheat your oven to 325°F (165°C).

    2. In a large oven-safe Dutch oven or heavy-bottomed pot, cook the bacon over medium heat until crispy. Remove the bacon and set it aside, leaving the bacon grease in the pot.

    3. Season the beef generously with salt and pepper. In the same pot with the bacon grease, sear the beef on all sides until it develops a nice brown crust. This should take about 4-5 minutes per side. Once seared, remove the beef from the pot and set it aside.

    4. In the same pot, add a bit more oil if needed, then add the chopped onions, carrots, and celery. Cook, stirring occasionally, until the vegetables are softened, about 5-7 minutes. Add the minced garlic and cook for an additional 1-2 minutes until fragrant.

    5. Stir in the Italian seasoning, red pepper flakes, bay leaves, rosemary, and thyme. Cook for another minute until the herbs are aromatic.

    6. Return the beef and bacon to the pot, along with any juices that may have accumulated. Pour in the diced or crushed tomatoes and beef broth. Bring the mixture to a simmer.

    7. Cover the pot with a lid and transfer it to the preheated oven. Allow the pot roast to cook in the oven for about 3 to 3 1/2 hours, or until the beef is fork-tender and easily pulls apart.

    8. Once the pot roast is done, remove it from the oven and let it rest for about 10 minutes before serving.

    9. Serve the Italian Pot Roast (Stracotto) hot, garnished with fresh herbs if desired. Enjoy your delicious, flavorful pot roast!

Tips for Perfect Sheet Pan Baked Egg Rolls:

    • Don’t Overfill: Be careful not to overfill the egg roll wrappers, as this can cause them to burst open during baking.
    • Seal Well: Make sure to seal the edges of the egg rolls well with water to prevent them from opening up while baking.
    • Turn for Even Browning: Turning the egg rolls halfway through baking ensures they brown evenly on all sides.

    Variations:

    • Vegetarian: For a vegetarian version, replace the meat with tofu or additional vegetables like mushrooms, bell peppers, and zucchini.
    • Spicy: Add a teaspoon of sriracha or chili garlic sauce to the filling for a spicy kick.

    • Cinnamon, cloves, nutmeg, as desired (you added a spicy mixture of 1 tablespoon)

    For the cream:

    • 7-8 ounces cream cheese
    • 1/4 – 1/3 cup powdered sugar
    Preparation: Cake

Let’s dive into making this delightful cake:

    1. Grate the Carrots: Start by grating the carrots finely. This step ensures a moist and flavorful cake.
    2. Zest the Orange: Use a grater or zester to collect the fragrant zest of one orange. This adds a refreshing citrusy note to the cake.
    3. Prepare the Walnuts: Chop the walnuts either with a knife or in a grinder. Opt for a coarse texture to add a delightful crunch to each bite.
    4. Beat Eggs and Sugar: In a mixing bowl, beat the eggs and sugar together until they form a smooth and creamy mixture.
    5. Incorporate Oil: Gradually add the vegetable oil to the egg and sugar mixture, stirring well to ensure it’s fully incorporated.

    8. Fold in Dry Ingredients: Gradually incorporate the dry ingredients into the wet mixture, stirring gently until a smooth batter forms.

    1. Mix Cream Cheese and Sugar: In a bowl, combine the cream cheese and powdered sugar. Beat until smooth and creamy, adding more sugar if desired for sweetness.
    Baking and Serving

Once the cake is baked and cooled, it’s time to indulge:

    1. Cool Completely: Allow the cake to cool completely before frosting. This ensures that the cream cheese frosting maintains its texture and doesn’t melt.
    2. Spread the Cream: Generously spread the prepared cream cheese frosting over the top of the cooled cake, using a spatula or knife to create an even layer.

    1. Melt Butter:
In a medium saucepan, melt the unsalted butter over medium heat. Once melted, add the all-purpose flour, whisking constantly to form a roux. Cook for about 2 minutes, until the mixture is lightly golden and has a slightly nutty aroma.

    1. Preheat Oven:
Preheat your oven to 375°F (190°C). Grease a 9×13 inch baking dish to prevent sticking.

    • Place 3-4 lasagna noodles over the sauce, covering the bottom of the dish.
    • Spread one-third of the ricotta-chicken mixture over the noodles.
    • Spoon and spread a few tablespoons of pesto over the chicken mixture.
    • Pour another layer of béchamel sauce over the pesto.
    • Repeat these layers twice more: noodles, chicken mixture, pesto, and béchamel sauce.
    1. Top Layer:
For the final layer, place the remaining lasagna noodles on top, spread a generous amount of béchamel sauce, and sprinkle with 2 cups of shredded mozzarella cheese and 1/2 cup of grated Parmesan cheese.

Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes.

    3. Rest:
Remove the lasagna from the oven and let it rest for 10-15 minutes before slicing and serving. This allows the layers to set and makes it easier to cut neat slices.

    •  1 tablespoon olive oil
    •  1 clove garlic, minced
    •  Salt and pepper to taste
    •  Lemon wedges, for serving

    Instructions:

    Step 1: Preparing the Steak

    1. Season the Steak: Rub the steaks with olive oil, then season generously with salt and freshly ground black pepper on both sides. Let the steaks sit at room temperature for about 30 minutes.
    2. Prepare the Garlic and Herbs: In a small bowl, combine the minced garlic, chopped rosemary, and thyme.

    Step 2: Grilling the Steak

    3. Preheat the Grill: Preheat your grill to high heat (around 450°F to 500°F).
    4. Sear the Steaks: Place the steaks on the grill and sear for about 3-4 minutes on each side, or until a nice crust forms.
    5. Add Flavor: Once both sides are seared, reduce the grill heat to medium. Add the garlic and herb mixture to the steaks, and place a small pat of butter on top of each steak.
    6. Cook to Desired Doneness: Continue grilling the steaks to your desired doneness. Use a meat thermometer to check the internal temperature: 125°F for rare, 135°F for medium-rare, 145°F for medium, 150°F for medium-well, and 160°F for well-done.
    7. Rest the Steaks: Remove the steaks from the grill and let them rest for 5-10 minutes to allow the juices to redistribute.

    Step 3: Preparing the Broccolini

    9. Grill the Broccolini: Place the broccolini on the grill and cook for about 5-7 minutes, turning occasionally, until they are tender and have a slight char.

    Step 4: Serving

    10. Slice the Steak: Slice the steaks against the grain into thick slices.
    11. Arrange on Platter: Arrange the sliced steak on a serving platter, placing the grilled broccolini in the center for a beautiful presentation.
    12. Garnish: Serve with lemon wedges on the side for a fresh, tangy finish.

    Tips:

    •  Resting Time: Allowing the steak to rest after grilling ensures the juices stay in the meat, making it more flavorful and tender.
    •  Grill Marks: For perfect grill marks, avoid moving the steaks too much while searing.
    •  Herb Butter: For an extra touch, you can make herb butter by mixing softened butter with garlic, rosemary, and thyme, and melting it over the steak before serving.

Enjoy your deliciously grilled steak with a side of tender, charred broccolini!
