      • 5 medium potatoes, peeled and thinly sliced
      • 4 eggs
      • 1 tsp salt
      • 1 tsp black pepper
      • 1 tsp oregano
      • 3 fluid oz (100 ml) cream
      • 3 tbsp flour
      • 5 oz (150 g) Emmental cheese, grated
      • 1 zucchini, thinly sliced
      • 1 onion, finely chopped
      • 2 cloves garlic, minced
      • 2 chicken fillets, cut into thin strips
      • 5 oz (150 g) mushrooms, sliced
      • Olive oil, for frying

    For the Sauce:

      • Greek yogurt
      • 1 tsp mustard
      • 1 mini cucumber, finely diced
    • Juice of 1 lemon
    • Fresh parsley, finely chopped

    Instructions:

      1. Preparing the Potatoes:
          • Preheat your oven to 180°C (350°F).

          • Start by peeling and slicing the 5 medium potatoes. Arrange them in a greased baking dish, seasoning with a pinch of salt and pepper.
          • In a bowl, whisk together the 4 eggs, 3 tablespoons of flour, 3 fluid oz of cream, 1 tsp oregano, and a pinch of black pepper. Pour this creamy mixture over the potatoes, making sure each slice is well coated.
          • Sprinkle the grated Emmental cheese over the top, giving it that deliciously cheesy crust when baked.

      2. Preparing the Chicken and Vegetables:
          • In a large skillet, heat some olive oil over medium heat. Add the chopped onion and garlic and sauté until fragrant and translucent.
          • Add the sliced chicken fillets to the pan, seasoning with a pinch of salt and pepper. Cook the chicken until it’s golden brown and fully cooked.

        • Toss in the sliced mushrooms and zucchini. Continue cooking for another 5-7 minutes, stirring occasionally, until the vegetables soften and the flavors meld together beautifully.
      3. Baking:
          • Take the cooked chicken, mushrooms, and zucchini mixture and layer it evenly over the potatoes in the baking dish.

        • Bake the entire dish in the preheated oven for 25-30 minutes, or until the top is golden brown and bubbly.
        • Once done, let it cool for a few minutes before slicing and serving.
      1. Making the Sauce:
        • While the dish is baking, prepare a refreshing yogurt sauce. In a small bowl, mix together the Greek yogurt, 1 tsp mustard, the finely diced mini cucumber, lemon juice, and freshly chopped parsley. Stir well until combined.
        • This tangy, creamy sauce pairs perfectly with the rich and cheesy potato and chicken dish.

  • Custard Donuts

    Custard Donuts

When it comes to taking advantage of food, the most creative ideas come out.

It’s rare that in my house some sweets get hard, there’s no time! However, I don’t know-how. There were some donuts in the fridge that was already a little “stiff.”
Normally, I would have given them a few seconds in the micro, and that was it, just like freshly made. But it occurred to me to do something different with them, and I took advantage of this recipe from pasen y disgusted to make a great donut custard.

Warning: not suitable for operation bikini, but if you are lovers of these delicious donuts, you can give yourself a treat.

    Ingredients

2 donuts and a half +1/2 donut to garnish
    2 eggs
    450 ml milk
    100 gr sugar
    1 teaspoon cornstarch

    Instructions

1/ Put the two and a half donuts in the glass of the thermomix and grind 5 seconds at speed 8.

2/ Add the milk, eggs, sugar, and cornstarch—blend 30 seconds at speed 4.

3/ Then we program 10 minutes, 90º and speed 4.

4/ When finished, pour into the glasses or containers and let cool. Garnish with pieces of the half donut that we had reserved.

5/ If you do not have a thermomix, we will do it like this. Chop the donuts with a knife or with the mixer. Add the rest of the ingredients and mix very well. Heat in a saucepan over low heat, constantly stirring until we notice that it has thickened a little. Pour into the containers and cool.

6/ Put the doughnuts in the glass and grind them.

    7/ Add the milk.

8/ The eggs, sugar, and cornstarch. Beat well and then cook.

9/ Let them cool and garnish.

    Ingredients:

    • 2 cups cooked chicken (chopped or shredded; rotisserie works great)
    • 8 strips cooked bacon (chopped)
    • 1 cup shredded cheddar cheese
    • 1/2 cup cream cheese (softened)
    • 1/4 cup ranch dressing
    • 1/4 cup chopped green onions (optional, for garnish)

    1. Prep the Filling: In a bowl, mix the shredded chicken, chopped bacon, shredded cheddar, softened cream cheese, ranch dressing, and chopped green onions (if using) until well combined.
    2. Assemble the Roll-Ups: Lay a tortilla flat. Spread a portion of the chicken mixture evenly over the tortilla, leaving a half-inch border to prevent spills.
    3. Roll: Starting at one end, tightly roll the tortilla into a log shape, gently pressing as you go to keep the filling inside.
    4. Chill (Optional): For easier slicing, chill the roll-up in the refrigerator for 20-30 minutes.
    5. Slice: Use a sharp knife to cut the roll-up into 1-inch pinwheels.
    6. Serve: Arrange the pinwheels on a plate. Garnish with extra shredded cheese or chopped green onions if desired. Enjoy immediately or store in the fridge until ready to serve.

    Tips for the Best Roll-Ups:

    • Fresh Ingredients: For maximum flavor, use freshly cooked chicken and bacon. Rotisserie chicken is convenient, but roasting your own can add a personal touch.
    • Customize: Feel free to adjust seasonings. For a spicy kick, add sliced jalapeños or a pinch of cayenne pepper.
    • Prep Ahead: These roll-ups are great for meal prep—make them in advance and store in the fridge.
    • Tortilla Variety: Try different tortillas like spinach, whole wheat, or sun-dried tomato for added flavor and color.
    • Dipping Sauces: Serve with extra ranch dressing, BBQ sauce, or spicy aioli for an extra flavor boost.

This homemade churro recipe brings the essence of Spanish street food to your kitchen. Simple ingredients and easy steps make this a great recipe to try for a cozy night in or a fun dessert for guests.

Here’s a step-by-step guide to making these delicious fried treats.

    Ingredients

    For the Churros:

    • 1 cup water
    • 2 tablespoons sugar
    • ½ teaspoon salt
    • 2 tablespoons unsalted butter
    • 1 cup all-purpose flour
    • 1 large egg
    • ½ teaspoon vanilla extract
    • Vegetable oil, for frying

    For the Coating:

    • ½ cup granulated sugar
    • 1 teaspoon ground cinnamon (optional)

    For Dipping (Optional):

    • Melted chocolate or hot chocolate for dipping

    INSTRUCTIONS:

    Step-by-Step Instructions

Step 1: Make the Churro Dough

    1. Combine Wet Ingredients: In a medium saucepan over medium heat, combine the water, sugar, salt, and butter. Stir until the butter is melted and the mixture begins to boil.
    2. Add the Flour: Reduce heat to low, then add the flour all at once. Stir vigorously with a wooden spoon until the dough forms a ball and pulls away from the sides of the pan.
    3. Cool the Dough: Remove the pan from the heat and let the dough cool for about 5 minutes.
    4. Add Egg and Vanilla: Add the egg and vanilla extract to the cooled dough. Stir well until the mixture is smooth and the egg is fully incorporated. The dough should be thick and slightly sticky.

    Step 2: Prepare for Frying

    1. Heat the Oil: In a deep saucepan or pot, heat about 2 inches of vegetable oil over medium-high heat until it reaches 350°F (175°C). Use a thermometer if possible to ensure the right temperature.
    2. Prepare the Piping Bag: Spoon the churro dough into a piping bag fitted with a large star tip. This tip gives churros their signature ridges.

Step 3: Pipe and Fry the Churros

    1. Pipe the Dough: Carefully pipe 4-5 inch strips of dough directly into the hot oil, using scissors or a knife to cut the dough at the tip of the piping bag.
    2. Fry the Churros: Fry a few churros at a time, making sure not to overcrowd the pan. Cook for about 2-3 minutes on each side, or until they’re golden brown and crispy.
    3. Drain Excess Oil: Use a slotted spoon to remove the churros from the oil and place them on a paper towel-lined plate to drain any excess oil.

Step 4: Coat the Churros in Sugar

    1. Prepare the Coating: In a shallow dish, combine the sugar and cinnamon (if using).
    2. Coat the Churros: While the churros are still warm, roll them in the sugar mixture until evenly coated.

Step 5: Serve with Chocolate Dip (Optional)

    1. Prepare the Chocolate Dip: Melt chocolate in a microwave-safe bowl or over a double boiler until smooth. If you prefer, serve with a thick hot chocolate.
    2. Serve: Place the churros on a serving plate, and serve with the chocolate dip on the side for dunking.

    Tips for Perfect Churros

    1. Control the Oil Temperature: Keeping the oil at the right temperature is essential. If it’s too hot, the churros will brown quickly but remain raw inside; if too cool, they’ll absorb too much oil.
    2. Rest the Dough: Allowing the dough to cool slightly before adding the egg prevents it from scrambling, ensuring a smooth dough.
    3. Use a Star Piping Tip: A star tip creates ridges that help the churros cook evenly and absorb the sugar coating better.
    4. Eat Fresh: Churros are best enjoyed fresh, as they tend to lose their crispiness over time.

    Serving Suggestions

    • Serve churros warm with a side of chocolate sauce, caramel, or even dulce de leche for dipping.
    • For a unique twist, drizzle melted chocolate over the top or add a sprinkle of powdered sugar.

    Storage and Reheating

    • Storage: If you have leftover churros, store them in an airtight container at room temperature for up to 2 days.
    • Reheating: Reheat churros in a preheated oven at 350°F (175°C) for about 5-7 minutes to regain their crispiness.

    Ingredients You’ll Need:

    For the Pastry Balls:

    • 1 cup (240 ml) water
    • 1/2 cup (115 g) unsalted butter, cut into cubes
    • 1 cup (125 g) all-purpose flour
    • 4 large eggs
    • 1/4 teaspoon salt
    • 1 teaspoon sugar

    For the Cream Filling:

    • 1 cup (240 ml) heavy whipping cream, cold
    • 2 tablespoons powdered sugar
    • 1 teaspoon vanilla extract

    For the Berry Mixture:

    • 1 cup mixed berries (blueberries, raspberries, strawberries, or blackberries)
    • 1 tablespoon sugar (optional)
    • 1 tablespoon fresh lemon juice (optional)

    For Topping:

    • Powdered sugar for dusting

    INSTRUCTIONS:

    Step-by-Step Instructions

    Step 1: Preheat the Oven

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper to prevent sticking and ensure even baking.

Step 2: Make the Pastry Dough (Pâte à Choux)

    1. In a medium saucepan, combine the water, butter, salt, and sugar. Bring this mixture to a boil over medium heat, stirring occasionally.
    2. Once the butter has melted and the mixture begins to bubble, reduce the heat to low and add the flour all at once. Stir continuously with a wooden spoon until the dough forms a ball and starts to pull away from the sides of the saucepan (about 2-3 minutes).
    3. Remove the saucepan from the heat and let the dough cool slightly for a few minutes.
    4. Add the eggs one at a time, mixing well after each addition. The dough may look like it’s separating, but keep stirring until each egg is fully incorporated before adding the next. After adding all the eggs, the dough should be smooth and shiny.
    5. Transfer the dough to a piping bag fitted with a large round tip, or simply use a spoon to place dollops of dough on the prepared baking sheet. Each pastry ball should be about 1 inch in diameter.

Step 3: Bake the Pastry Balls

    1. Bake the pastry balls in the preheated oven for 20-25 minutes, or until they are puffed up and golden brown. Avoid opening the oven door during the baking process, as this can cause them to deflate.
    2. Once baked, remove them from the oven and pierce a small hole in each pastry with a toothpick to release steam. Let them cool completely on a wire rack.

Step 4: Prepare the Cream Filling

    1. In a mixing bowl, combine the cold heavy whipping cream, powdered sugar, and vanilla extract.
    2. Using an electric mixer, whip the cream on medium-high speed until soft peaks form. Be careful not to over-whip, as the cream could turn grainy.
    3. Transfer the whipped cream to a piping bag with a small tip for easy filling.

Step 5: Prepare the Berry Mixture

    1. If using large strawberries, slice them into small pieces. For a sweeter berry filling, toss the berries with sugar and lemon juice in a small bowl. This will enhance the flavor of the berries and add a slight tang to the filling.
    2. Gently mix and let sit for a few minutes until the berries release some of their natural juices.

Step 6: Fill the Pastry Balls

    1. Using a sharp knife, slice each pastry ball in half or cut a small slit to create an opening.
    2. Pipe a generous amount of whipped cream into the center of each pastry.
    3. Add a spoonful of the berry mixture into the center of the cream, pressing gently to ensure they stay in place.
    4. Place the top of the pastry back on or leave the opening slightly open to showcase the filling.

    Step 7: Garnish and Serve

    1. Dust the tops of the filled pastry balls with powdered sugar for an elegant finish.
    2. Arrange them on a serving platter, and add extra berries or mint leaves for garnish if desired.

Tips for the Perfect Pastry Balls

    • Keep the Ingredients Cold: When making whipped cream, use cold heavy cream and chill your bowl and whisk attachment if possible. This will help the cream whip faster and create a better texture.
    • Adjust the Sweetness: You can adjust the sweetness of the whipped cream and berry filling to your taste. For a less sweet option, reduce the powdered sugar or skip the sugar in the berry mixture.
    • Experiment with Fillings: This recipe is versatile—try adding a dollop of lemon curd or chocolate ganache to the cream for a twist on the classic filling.

    Serving Suggestions

These pastry balls are best enjoyed fresh, as the whipped cream filling can cause the pastry to soften if left for too long. Serve them as an elegant dessert after dinner or as a luxurious addition to a brunch spread.

    Storage

If you have leftovers (although they’re so delicious, it’s hard to believe you will!), store them in the refrigerator in an airtight container for up to 2 days. The pastry may lose some of its crispness, but they’ll still taste delightful.

    Ingredients:

To make about 20 mini cheese balls, you’ll need:

    For the Cheese Mixture:

    • 8 oz (1 package) cream cheese, softened
    • 1 cup sharp cheddar cheese, shredded
    • 1/2 cup cooked bacon, finely crumbled
    • 1 tablespoon green onions, finely chopped (optional for a mild onion flavor)
    • 1 tablespoon fresh chives, finely chopped
    • 1/2 teaspoon garlic powder
    • 1/2 teaspoon onion powder
    • Salt and black pepper to taste

    For the Coating:

    • 1/2 cup cooked bacon, finely crumbled (separate from the bacon in the mixture)
    • 1/4 cup fresh parsley, finely chopped
    • 1/4 cup fresh chives, finely chopped
    • 1/4 cup pecans or walnuts, finely chopped (optional, for added crunch)

    Optional Garnish:

    • Mini pretzel sticks or toothpicks (for easy serving)

    INSTRUCTIONS:

Step 1: Prepare the Cheese Mixture

    1. Soften the Cream Cheese: Take the cream cheese out of the refrigerator and let it soften at room temperature for about 10-15 minutes. This will make it easier to mix.
    2. Mix the Ingredients: In a large mixing bowl, add the softened cream cheese, shredded cheddar cheese, crumbled bacon, green onions, chives, garlic powder, and onion powder. Season with salt and black pepper to taste.
    3. Combine Thoroughly: Use a spoon or a rubber spatula to mix all the ingredients until they’re fully combined and smooth. Be sure the cheddar cheese, bacon, and herbs are evenly distributed throughout the cream cheese mixture.

    Step 2: Chill the Mixture

    1. Refrigerate: Cover the bowl with plastic wrap and place it in the refrigerator for about 30 minutes. Chilling helps firm up the cheese mixture, making it easier to roll into balls.

Step 3: Prepare the Coating Mixture

    1. Mix the Coating Ingredients: While the cheese mixture is chilling, prepare the coating. In a shallow dish, combine the crumbled bacon, chopped parsley, chives, and chopped nuts (if using).
    2. Set Aside: Keep this mixture ready for rolling the cheese balls once they’re formed.

Step 4: Form the Mini Cheese Balls

    1. Roll into Balls: Once the cheese mixture is firm, remove it from the refrigerator. Using a small spoon or a cookie scoop, take about 1 tablespoon of the mixture and roll it between your hands to form a small ball.
    2. Coat the Cheese Balls: Roll each cheese ball in the prepared coating mixture, pressing gently to ensure the coating sticks. The herbs, bacon, and nuts should cover the surface evenly, giving the cheese balls a beautiful, textured appearance.
    3. Repeat: Continue forming and coating the cheese balls until all the mixture is used. You should have around 20 mini cheese balls.

Step 5: Add Garnish and Serve

    1. Insert Pretzel Sticks or Toothpicks: If you’d like to serve the cheese balls with a little flair and make them easier to pick up, insert mini pretzel sticks or toothpicks into each ball.
    2. Chill Before Serving: For the best flavor and texture, refrigerate the cheese balls for an additional 10-15 minutes before serving. This will allow the flavors to meld and the cheese balls to set firmly.
    3. Serve and Enjoy: Arrange the cheese balls on a platter and watch them disappear!

Tips for Making the Best Bacon Cheddar Mini Cheese Balls

    • Customize Your Coating: Get creative with your coatings! Besides bacon, parsley, chives, and nuts, you could try rolling the cheese balls in crushed pretzels, crispy fried onions, or even grated Parmesan cheese for added flavor.
    • Make Ahead of Time: These mini cheese balls can be prepared a day ahead. Simply store them in an airtight container in the refrigerator until ready to serve. Just wait to add the pretzel sticks or toothpicks until right before serving to keep them from getting soggy.
    • Room Temperature vs. Chilled: If you prefer a softer texture, let the cheese balls sit at room temperature for about 10-15 minutes before serving. For a firmer texture, serve them straight from the refrigerator.
    • Try Different Cheeses: While sharp cheddar pairs wonderfully with bacon, feel free to experiment with other cheeses like gouda, pepper jack, or blue cheese for a unique twist.
