  • Refined Potato and Egg Feast

    Refined Potato and Egg Feast

    Ingredients:

    • Base:
      • 1 kilogram of medium-sized potatoes, peeled and sliced into thin rounds
      • 6 large eggs
      • 100 grams of your favorite cheese, grated (consider a cheese that melts well)
    • Seasoning:
      • Vegetable oil, for cooking
      • Salt and freshly ground black pepper, to taste
      • 1/2 teaspoon of granulated garlic powder
      • 1/3 teaspoon of ground turmeric

    Instructions:

    1. Prep the Potatoes: Begin by slicing the potatoes into thin, even rounds. This ensures they cook thoroughly and evenly.
    2. Cook Potatoes: Heat a generous amount of vegetable oil in a large skillet over medium heat. Add the potato slices in batches, seasoning with salt and black pepper. Fry until they are golden and crispy on both sides. Remove the potatoes from the skillet and place them on a paper towel to drain excess oil.
      1. Season: Sprinkle the fried potatoes with the granulated garlic and turmeric, tossing gently to ensure they are evenly coated. The turmeric not only adds a vibrant color but also a subtle earthy flavor, complementing the garlic.
      2. Scramble the Eggs: In the same skillet, reduce the oil if necessary, and lightly beat the eggs with a pinch of salt and pepper. Pour the eggs over the medium heat and stir gently, cooking until they are softly scrambled. Be careful not to overcook; you want them to remain slightly moist.
      3. Combine: Add the seasoned potatoes back into the skillet with the scrambled eggs. Gently mix to combine, allowing the flavors to meld together over low heat.
      4. Add Cheese: Sprinkle the grated cheese over the potato and egg mixture. Cover the skillet with a lid for a minute or two, just until the cheese has melted beautifully into the dish.
      5. Serve: Once the cheese is perfectly melted, remove the skillet from the heat. Serve hot, directly from the skillet, for a rustic and inviting presentation.
This dish is a testament to how simple ingredients, when prepared with a bit of creativity and care, can transform into a meal that’s not only deeply satisfying but also packed with flavors that dance together in harmony. It’s perfect for a cozy dinner, offering comfort in every bite with the delightful crunch of potatoes, the soft richness of eggs, and the gooey goodness of melted cheese, all spiced to perfection.

    • White Onion 1, diced: Adds sweetness and depth to the dish.
    • Garlic 4 cloves, minced: Infuses the dish with a robust garlic flavor.
    • Dried Thyme 1 teaspoon: Adds an earthy flavor.
    • Dried Rosemary 1/2 teaspoon, crumbled: Adds a fragrant, pine-like taste.
    • Chicken Broth 600ml / 2.5 cups: Provides a flavorful cooking liquid.
    • Long-Grain White Rice 190g / 1 cup, not quick cooking: Absorbs flavors and cooks to perfection.
    • Heavy Cream 120ml / 1/2 cup: Adds creaminess to the sauce.
    • Parmesan Cheese 60g / 1/2 cup, freshly grated: Adds a savory, cheesy flavor.
    • Kosher Salt and Freshly Ground Black Pepper to taste: Essential for seasoning.
    • Fresh Parsley chopped, for serving: Adds a fresh, vibrant touch.

    Instructions

    • Heat your skillet over medium-high heat and melt the butter. Add diced onion and sauté until it softens (approx. 2-3 mins).
    • Introduce the cubed chicken to the skillet and season with kosher salt, freshly ground black pepper, thyme, and rosemary. Cook until chicken develops a golden-brown crust on all sides, roughly 5 minutes. Stir in the minced garlic and cook for another minute.
    • Pour in chicken broth and rice, and mix until well combined. Bring the mixture to a boil, cover your skillet, and turn down the heat to medium-low.
    • Allow the mixture to simmer until the rice becomes tender (about 15-20 mins). Once ready, take off the heat and mix in the heavy cream and freshly grated parmesan.
    • Serve this scrumptious meal with extra parmesan and a sprinkle of chopped fresh parsley if desired.
