Mediterranean Puff Pastry Pizza Squares
Ingredients
1 sheet puff pastry (store-bought, thawed)
½ cup tomato paste or pizza sauce
1 tsp olive oil
1 small onion, finely diced
1 clove garlic, minced
½ cup green bell pepper, chopped
½ cup red bell pepper, chopped
½ cup yellow bell pepper, chopped
1 cup cooked minced beef or lamb (optional for non-veg version)
1 cup mozzarella cheese, shredded
½ cup cheddar cheese, shredded
1 tsp dried oregano
½ tsp dried basil
½ tsp paprika
Salt and pepper to taste
2 tbsp mayonnaise or cheese sauce (for drizzle)
Instructions
Prepare the Base:
Preheat your oven to 200°C (390°F). Unroll the puff pastry sheet and place it on a lightly greased baking tray. Gently prick it with a fork to prevent it from puffing too much.
Make the Sauce Layer:
In a pan, heat olive oil and sauté onions and garlic until soft. Add the tomato paste, a pinch of salt, oregano, and basil. Simmer for 3–4 minutes, then spread this sauce evenly over the pastry base.
Add Toppings:
Sprinkle the diced peppers evenly across the pastry. If you’re using cooked minced meat, spread it over the top. Season with paprika and black pepper for extra flavor.
Cheese and Drizzle:
Drizzle a little mayonnaise or cheese sauce over the top (as shown in the picture). Then, scatter the mozzarella and cheddar evenly to create a golden, bubbly crust.
Bake:
Place the tray in the preheated oven and bake for 20–25 minutes, or until the edges are golden and the cheese is melted and slightly browned.
Slice and Serve:
Once baked, remove from the oven and let it cool for a few minutes. Slice into squares and serve warm.

Serve with a light cucumber and olive salad or a side of tzatziki for a true Mediterranean touch. Perfect for a quick lunch, party snack, or light dinner.
